Here is the dessert of last Sunday, light because the rest of the meal was very roborant.

I prepared it with my Cooking-chef, what makes that the task is easy but with a thermometer to sugar, a pan and a whip, it is also simple, it is enough to be more watchful.

You need:

    * 100 gr of raspberries (frozen for me, we are in March)
    * 200 ml of fresh cream
    * 1 egg + 3 egg yolks
    * 60 gr sugar

Go up the cream in whipped cream until obtain peaks and reserve for the cold.

Mix raspberries and pass through a stamen to eliminate the small beads.

Put in a pan, one whole egg and three yellow and 60 sugar and beat ceaselessly on average fire, when the mixture reaches the temperature of 120 °, to stop the fire and let cool.

In 40 °, add the mixed raspberries and indeed mix, then add the whipped cream and mix delicately to obtain a homogeneous texture and a color.

Place in the freezer a one night.

Here, I served it with a little bit foam white chocolate frozen strewed with cocoa and some stalks of chive (delicious with the raspberry, it is top !).

Voici le dessert de dimanche dernier, léger car le reste du repas était bien roboratif.

Je l'ai préparé avec mon cooking chef, ce qui rend la tâche plus facile mais avec un thermomètre à sucre, une casserole et un fouet, c'est simple également, il suffit d'être plus vigilant.

Il vous faut :

100 gr de framboises (surgelées pour moi, on est en mars...)
200 ml de crème fraîche
1 oeuf + 3 jaunes d'oeufs
60 gr sucre

Monter la crème en chantilly jusqu'à obtenir des pics et réserver au froid.

Mixer les framboises et passer au travers d'une étamine pour éliminer les petits grains.

Mettre dans une casserole,1 oeuf entier et 3 jaunes et 60 sucre et battre sans cesse sur feu moyen, quand le mélange atteint la température de 120°, arrêter le feu et laisser refroidir .

A 40°, ajouter les framboises mixées et bien mélanger, puis ajouter la chantilly et mélanger délicatement pour obtenir une texture et une couleur homogènes.

Placer au congélateur toute une nuit.

Ici, je l'ai servi avec un peu de mousse chocolat blanc glacée parsemée de cacao et quelques brins de ciboulette (à croquer avec la framboise, c'est bluffant !).
