Cocci-charlotte in english

Sorry, I have not had time to take a picture right, it was too good!

I propose to you today my "cocci-charlotte", it's pretty and delicious. My friends are crazy.

I always prepare for the day that it holds well in the stripping and perfumes are diffused well.

Line the charlotte mold with plastic wrap, it should extend far enough to cover the charlotte. For my part, I used a pan, the handle is removable.

You will need:

   
* 250 g frozen raspberries
   
* 2 grams of agar-agar
   
* 2 teaspoon sugar
   
* 2 teaspoon water
   
* 20 to 25 biscuits depending on size to fit your mold.

Raspberry Mirror

Put the raspberries and sugar in a saucepan and melt it off, leave about 10 minutes over low heat, stirring occasionally to mix ingredients well.

Mix well to dissolve the agar-agar with water and place in pan. Boil about 3 min but not less.

Pour half into the bottom of charlotte mold and set aside.

Cookies:
Make a syrup rum-sugar-water equally and quickly dip biscuits, paper with them in the mold wall ensuring that dip in the mirror. Chill.

Chocolate Mousse:

Last step:
Fill the charlotte mold with half the chocolate mousse and then make a stage biscuits dipped in syrup.

Pour the remaining mousse and finish with remaining raspberry mirror.
Let cool overnight and taste.
